Tommy Bahama's Restaurant & Bar at Town Square Celebrates This Holiday Season with Rum Pairing Menu

Tommy Bahama’s Restaurant & Bar in Town Square, home to the city’s largest rum collection, held a Rum Locker Party for invited guests on Thursday night, December 2 to celebrate its special rum-pairing menu for the holiday season that showcases the island libations.

The evening’s event featured a Tropical Fruit Tree and Citrus Ginger Punch Bar, rum cocktails with exciting names and equally flavorful kick such as Citrus Ginger Punch, Bangkok Smash, Painkiller #2, Kraken Up, Swizzle This and Millionaire’s Mai Tai, and appetizers from the creative mind of Chef Shane. The delectable offerings included: Creole spiced pork tenderloin with Cruzan Black Strap soaked rum raisin papaya compote on plantain tostones; Jamaican jerked chicken lollipops, deep fried Coral Cod mini sandwiches with hydroponic Bibb and key lime papaya tartar sauce: Guava barbequed pulled pork on black bean and corn Johnny cakes; Caribbean spiced mini burgers with jerk mustard and Roma tomatoes; and San Juan shrimp cerviche with cinnamon sugar dusted potatoes. And not to be left out, non-meat eaters such as my hubby, had the pleasure of being treated to an asparagus and goat cheese quesadilla topped with lime sour cream and tomato jam that was heavenly.

For dessert, there were sinfully delicious samplings of Papa Bahama’s Key Lime Napoleons with white chocolate mousse whipped cream and Blackbeard’s Guittard triple chocolate cake Napoleons with Cruzan Black Strap rum and mocha mousse whipped cream.

For adventurous types looking for the perfect pairing of culinary dish and rum cocktail, Chef Shane has put together a special holiday menu featuring six mouth-watering courses each paired with a rum cocktail from the internationally-inspired collection.

The experience begins with the Big Island Goat Cheese, encrusted with warm macadamia nut, sweet soy glaze and mango salsa served with flatbread and paired with the first rum cocktail: Citrus Ginger Punch, a tropical take on the traditional rum punch featuring Appleton, 12 yr.

The second course is Loki-Loki Tuna Poke, fresh ahi with guacamole, capers, soy and sesame paired with the Bangkok Smash cocktail.

The pairing continues with a Duo of Soups featuring crab bisque with sherry, cream and lump blue crab along with tortilla soup with ground corn tortillas, grilled chicken and lime sour cream paired with the signature Kracken Up rum cocktail.

Tommy’s rib rack with its smoky flavor follows and its own homemade blackberry brandy barbecue is boldly-paired with a Polynesian-inspired Mai Tai.

For a lighter take, continue with old San Juan Shrimp and Scallop, pan-seared in a coconut curry sauce and paired with the palate-pleasing Swizzle This.

To top all off, desserts are a sweet bite-sized duo of Piña Colada Cake and Triple Chocolate Cake paired with the popular classic hot buttered rum.
